  1. in a blender or food processor, combine the salsa ingredients.
  2. cover and pulse until salsa reaches desired consistency.
  3. transfer to a bowl.
  4. cover and refrigerate.
  5. in a skillet, cook beef over medoum heat until no longer pink.
  6. drain.
  7. sprinkle with salt.
  8. in another skillet, heat oil.
  9. fry tortillas just until softened.
  10. drain on paper towels.
  11. fill tortillas with beef.
  12. sprinkle with cheese.
  13. fold in half.
  14. in an ungreased skillet, fry tortillas on both sides until crisp.
  15. serve with lettuce and salsa.
