Crispy Parmesan Breaded Chicken for One

"I like my breaded chicken with a crisp crust, but a lot of juice on the inside. I added some twists onto your basic parmesan and breadcrumb crusted chicken to suit my tastes and thought I’d share the wonderful results. I'm sure you have all of these ingredients on hand in your pantry already. Seasoning in the breading is subject to taste and can be varied to suit your spice mood ;-)"

  • Preheat oven to 350°.
  • Combine breadcrumbs, cheese, basil, salt and pepper and stir together.
  • Place these ingredients on a plate.
  • Coat chicken with a thin layer of non-fat yogurt on each side.
  • Sprinkle garlic powder, salt and pepper onto each side of chicken breast.
  • Dip both sides of coated chicken into breadcrumb mixture and shake off excess.
  • Place chicken in a Pam-coated pan and brown on medium-high heat for about 3 minutes on each side.
  • Place breast on a foil-lined baking sheet and bake for 30-35 minutes, flipping chicken half-way thru baking to ensure even browning.

  1. Hey, I don't have any sour cream. By the time you respond, though, I'll probably have some. For future reference, can the yogurt be substituted with mayonnaise?

  3. This is a great recipe! :) I didn't have plain yogurt on hand so I substituted with sour cream. Turned out fabulous. My kids loved it, and I wonder if my husband even tasted it he ate it so fast. Definitely a 5 star dish, all my picky eaters loved it. Thank you for posting!

  5. This is wonderful. Since I don't often have plain yogurt on hand, I substituted mayonnaise. On another occasion, I substituted Ranch dressing for the yogurt. both worked well.

  2. This was so quick, easy and yummy! I made two servings of this and it was great, I used a Greek yogurt instead of a non-fat yogurt. I also couldn't find Italian style breadcrumbs so I used plain breadcrumb with a sprinkle of Italian seasoning. Thank you Monkey28
