Crock-Pot Barley Casserole

ingredients
- 1 cup uncooked pearl barley
- 1⁄2 cup v- 8 juice
- 1⁄4 teaspoon white pepper
- 1 onion, chopped
- 3 garlic cloves, minced
- 1 red bell pepper, chopped
- 1 cup chopped mushroom
- 2 1⁄2 cups vegetable broth
- 1⁄3 cup toasted pine nuts
directions
- Combine all ingredients except pine nuts in a 3-4 quart slow cooker (do NOT use a larger crockpot).
- Cover and cook on low for 6-8 hours until barley and vegetables are tender.
- Sprinkle with nuts just before serving.

Delish! I changed this recipe slightly to make it more like soup by using about 2 cups of mushrooms (didn't measure), 1 can vegetable broth, 1 can tomatoes and about 1/2 can beef broth (which I needed to use up) and forgot about the pine nuts. Great and hearty soup which we enjoyed. Thanks for sharing!
