Crock-Pot Barley Casserole

  • Combine all ingredients except pine nuts in a 3-4 quart slow cooker (do NOT use a larger crockpot).
  • Cover and cook on low for 6-8 hours until barley and vegetables are tender.
  • Sprinkle with nuts just before serving.

  1. I have been looking for something to use up my pearl barley and this was a good recipe to do it. DH added a bit of precooked sausage to his but I ate it as written -except no mushrooms.
     
  2. Delish! I changed this recipe slightly to make it more like soup by using about 2 cups of mushrooms (didn't measure), 1 can vegetable broth, 1 can tomatoes and about 1/2 can beef broth (which I needed to use up) and forgot about the pine nuts. Great and hearty soup which we enjoyed. Thanks for sharing!
