Crock Pot Beefy Spanish Rice

"Found on the Web in response to the question, "Can rice be cooked in the crock pot?" I have not (yet) tried this myself."

  • Brown beef in a skillet and drain off fat; place beef in crock pot.
  • Add remaining ingredients to crock pot and stir well.
  • Cover and cook on Low for 6 to 8 hours.

  2. Mmmmmnn GOOD! I made this for my hubbie, 3 yr & 15 mo sons when I had to work one evening. I used long grain brown rice, and it came out amazing! My DH couldn't refill bowls fast enough, which doesn't happen often with my sons. Has a dim-sum sticky rice kind of texture. This recipie is now on our favorites rotation.
     
  3. This was good. I felt though that the cooking time was too long. Mine seemed ready at 4 hours and at 6 hours was quite mushy. I added some peas near the end to give it a little more texture. I also had to add a vegetable stock cube as the flavour was a bit bland. Overall though it was quite nice and makes good leftovers for sandwiches too.
     
  4. I used the 2 pounds of ground beef and doubled everything else, and I used brown rice instead of white. Everyone loved it. Great recipe!
     
  5. I have made this twice and we have all liked it. I did not pre cook the ground beef. It was easier and it turned out fine. I also added a bit of cumin. The leftovers I used the following night as a stuffing for stuffed peppers.

Tweaks

  1. Firstly my 2 and 4 yo loved it, was nice and soft. I found it too soft, maybe I cooked it too long? The rice was on the verge of mushy and it lacked flavour. I can't say I wouldn't cook it again, but if I did, I would use stock instead of plain water, I would brown the onions and mince with the salt and pepper and then place it in the cooker. I must admit that the onion and capsicum was a lovely flavour. Instead of chilli, you could maybe use a good chorizzo towards the end?
     
  2. Simple, but needs to cook most of the day. We used chunked lean chuck roast and fresh tomatoes instead of ground beef and canned tomatoes, but I think that probably improved it overall. Our rice was still crunchy at 6 hours and just barely done at a little over eight....
