Crock Pot Black Bean Torta

"This summer, I was given a cookbook called the "125 Best Vegetarian Slow Cooker Recipes" Now that I HAVE a slow cooker, unearthed from my mothers basement, I can actually try all the great recipes in my new book. A torta is a type of layered casserole, somewhat similar to an enchilada, but with out all the rolling."

  • In a large skillet, heat oil over medium heat.
  • Add onions and cook until soft, about 3 minutes.
  • add garlic, cumin, oregano, cracked pepper and cook for another minute.
  • Add corn, black beans and tomato sauce and bring to a boil.
  • Add cream cheese and stir until melted.
  • Remove from heat.
  • Spoon 1/2 cup of the bean mixture into the bottom of your slow cooker.
  • Lay 1 tortilla on top of the mixture.
  • Spread another 1/2 cup of the beans on top of the tortilla.
  • Repeat until all 8 tortillas are used.
  • Pour remaining bean mixture over the top of the last tortilla.
  • Cover and cook on LOW for 6-8 hours or on HIGH for 3-4 hours.
  • Spread green chilies over the top of the torta and sprinkle with the shredded cheese.
  • Cover and cook on high for 30 minutes or until cheese is melted.
  • Serve with salsa and sour cream.

  1. This was a pretty good recipe. Used flour tortillas which did become a little soggy as expected. It made a huge crockpot full! I served with guacamole and sour cream and a zucchini/yellow squash sautee. I thought it had good taste and have been eating leftovers for lunch with some tortilla chips to add a little texture.
     
  2. I really liked this recipe. It tasted better than it sounded actually. I did use corn torts instead of flour....delicious!
     
  3. We definitely enjoyed this, but even though I sprayed the pot first, the whole bottom layer turned black- ??? Also I only used about half the cumin and it was plenty spicy. Really tasty though, thanks for sharing!
     
  4. Very tasty dish but my tortillas burned to the sides and the middle was soggy. I served mine with sour cream since I like that flavor. I should have followed a previous persons advice about spraying with PAM first. Would have worked out better. Next time, I may make the filling with ground beef for burritos.
     
  5. I must have done something wrong. My tortills completely disintegrated and I was left with a bunch of mush that I threw out. If you make this, I don't recommend preparing it the night before you cook it.

  2. I wanted to comment on this recipe. I would give it 3-4 stars but I made so many changes, I didn't think it was a fair rating of the original recipe! First, I added a can of chicken (we are not vegetarians), then I substituted corn tortillas for the flour because I had an abundance of those. I didn't have green chilies. So, I think it would have had more flavor had I had them. I think it will make great leftovers, as the tastes will blend. I also really wish I had sour cream, because it would have added a lot to the dish. Thank you for posting!
