- 2 -3 cups cooked chicken (I used 6 chicken thighs baked in oven)
- 1⁄2 yellow onion, chopped
- 3 stalks celery, chopped
- 1⁄4 cup butter
- 1⁄4 cup flour
- 2 1⁄2 cups 2% low-fat milk
- 1 1⁄4 cups chicken stock (I use homemade stock)
- 6 ounces Velveeta cheese, cubed
- 3⁄4 cup buffalo wing sauce (I used Budwiser brand)
- 1⁄2 teaspoon celery seed
- 1⁄2 teaspoon garlic powder
directions
- I used a 5 to 6 quart crockpot.
- Make a roux with the flour and butter. I use the stove top. But you can use the microwave. Set aside.
- Chop up the onion and celery, and dump it into your crockpot. Add the cooked chicken. Pour in the chicken broth and milk. Add Velveeta.
- Stir in the flour and butter mixture. Add hot sauce.
- Cover and cook on low for 6-8 hours, or on high for 3-4. The soup is done when the celery and onion reach desired tenderness and the flavors have melded.

I loved this recipe, perfect for pot lucks. I've made several times and always turns out good with rave reviews. I increased servings to 10 to fill the pot, used Franks Red Hot Buffalo wing sauce, increased Velveeta slightly b/c I'm a cheese freak, and used whole/vit D milk instead of 2% thinking of thickness. The roux was tricky for my limited knowledge at first, but I eventually learned to microwave for 45/60 seconds at a time and stir with a wooden spoon and it's now easy. i think the viscosity of a thick syrup or milkshake is best, any more cook time and it gets harder and didn't mix in the soup as easily for me. I live on a very large farm here in West Virginia. We really do live off the land. I plant a large garden, I freeze, dehyrate and can everything possible. We raise beef cattle and hunt wild game. It's a family thing.
I met my husband at work. We got stuck on night shift together and he seemed to grow on me like a wart. We married 5 months after we started dating. We have now been married 11 yrs. He's a great husband and father too our two children. Our oldest is in the 6th grade and youngest is in the 5th grade. We have lived all over the east coast. We spent 5 years in South Carolina. I would have to say it was a great 4 years. I learned so much about that area and experienced alot of different foods while there. I truely miss the people from there.
A little about me. I'm a SAHM. Most of my time here alone is spent playing euchre, canning, gardening, cooking (a lot of OAMC), flipping thru my cook books (and i have plenty) and browsing thru Zaar! I just love it here. Trying to add a lot of our family favorites.
I enjoy traveling, reading, camping, fishing, hunting, gardening, canning, bbq-ing, bon fires, entertaining, baking, playing board and card games with the kids, swimming, photography, and just being with family and friends.

5 stars ~ perfect, will make again without any changes.
4 stars ~ like it, will make again with minor changes to suit our tastes
3 stars ~ had to make major changes but got it to work for us.
2 stars ~ too many changes needed, waste of my time.
1 star ~ just terrible, couldnt get it to work out. waste of money and time. I think I want to cry now.
