Crock Pot Chili With Cornmeal Dumplings

  • Fry ground beef and onions in a large pan until beef loses its pinkness; drain.
  • Place in crock pot with remaining ingredients, and stir.
  • Simmer on low for 7 hours, then turn to high setting.
  • To make dumplings, combine flour, cheddar cheese, cornmeal, and baking powder in a medium bowl.
  • In a small bowl, mix beaten egg, milk, and oil.
  • Add to flour mixture, and stir with a fork until just combined.
  • Drop dumplings by tablespoonfuls into chili.
  • Cover and cook for 50-60 minutes more.

  1. Absolutely Wonderful!! The chili was simple yet, tasty. I went back for thirds and was sooo full. I added Cumin to the chili and I also add diced Japaleno's to the cornmeal mix. Hubby and kids didn't care for the cornmeal dummplings, next time I will made some traditionally for them. Thank you, what a great recipe.
     
  2. This was a wonderful recipe but don't be disapointed when the cornmeal dumplings don't turn out like those you might find in chicken and dumplings. They're more like cornbread. My husband heard the word "dumpling" and I think he was disapointed with the dish because it wasn't what he expected. But I liked it a lot, first because it was easy and tasted good and second because I didn't have to make a pan of cornbread. It was right there in the crockpot! I did add a few more spices to the chili and apparently forgot to put in the kidney beans. (Oh well, it turned out good anyway.) Next time, I may add a little more milk or oil to the dumpling batter as they were on the dry side. I didn't measure very well though, so it was probably my mistake. Thanks for a great recipe that I'll make again!
