  • Place the onion, garlic, pumpkin and apple into the crock pot.
  • Mix thoroughly.
  • Add the spices and chicken stock powder.
  • Mix thoroughly.
  • Add water.
  • Mix thoroughly.
  • Turn crock pot to low and allow to cook for 7-10 hours.
  • Before serving blend all ingredients to form a smooth soup consistency.

  1. I thought this soup was ok. I used a little less cinnamon and think I personally prefer a little more spice (like curry) in these kind of soups. It was a nice dish for fall and definitely is on the healthy side so that gives it points.
     
  2. If I could give more than five stars, I would! This soup is excellent. It should be the official soup of autumn. It's smooth, sweet, yet spicy and makes your house smell great! Plus, it's healthy and lowfat....yayy! I made this as written, using the 4 cups of butternut squash and a gala apple. I made this on the stovetop; covered and simmered for 30 minutes. I can't imagine having to wait 7-10 hours to eat this if I used the crockpot! ;) I served this with a cool dallop of light sour cream. Thanx for sharing; this is a keeper for sure!!!!

  4. This was a total flop for us. The flavor was much too bland, after plenty of time in the crockpot for the flavors to come together. I tried adding some sugar and salt, as well as more cinnamon and some curry, but it did not help the flavor. It's possible we just don't have the right taste buds for this type of meal.
