Crock Pot Hen in Cherry Juice and Delicious Fruits

  • Prepare hen to be cooked (make sure to wash and remove anything you don't want to eat, but leave the skin on).
  • Stuff approximately half of the fruit required for the crock pot inside the hen, and place in crock pot breast up.
  • Add cherry juice, allspice, and remaining fruit to the crock pot.
  • Cook on low for 8-10 hours.
  • For the sauce: Add all of the ingredients listed to small sauce pan and bring to boil.
  • Let boil for 3-4 minutes and reduce heat to a medium simmer. Cover.
  • Let simmer for about 20 minutes until fruit looks plump and juice looks more like a light sauce.
  • Remove from heat and allow to slightly cool.
  • Serve meat what ever way looks good to you. I shredded the hen and drizzled with reduction. Wonderful for main course as is or on top of a green salad. Great left overs! Throw into some wholegrain bread for a delicious lunch. Hope you enjoy!
