Crock Pot Hen in Cherry Juice and Delicious Fruits

- 1 (5 1/2 lb) hen
- 2 cups juicy juice cherry juice
- 3 tablespoons jamaican allspice
- 1 cup green dried apple
- 1⁄2 cup dried apricot
- 1⁄2 cup dried cranberries
- 3 prunes

for the sauce
- 1⁄2 cup dried apricot
- 1⁄2 cup dried cranberries
- 1⁄3 cup prune
- 2 cups juicy juice cherry juice
- 1 tablespoon jamaican allspice
- 1 teaspoon ground cinnamon
- 1⁄8 cup roasted sliced almonds
directions
- Prepare hen to be cooked (make sure to wash and remove anything you don't want to eat, but leave the skin on).
- Stuff approximately half of the fruit required for the crock pot inside the hen, and place in crock pot breast up.
- Add cherry juice, allspice, and remaining fruit to the crock pot.
- Cook on low for 8-10 hours.
- For the sauce: Add all of the ingredients listed to small sauce pan and bring to boil.
- Let boil for 3-4 minutes and reduce heat to a medium simmer. Cover.
- Let simmer for about 20 minutes until fruit looks plump and juice looks more like a light sauce.
- Remove from heat and allow to slightly cool.
- Serve meat what ever way looks good to you. I shredded the hen and drizzled with reduction. Wonderful for main course as is or on top of a green salad. Great left overs! Throw into some wholegrain bread for a delicious lunch. Hope you enjoy!
