Crock Pot Indonesian Beef or Pork

- 2 lbs stewing beef or 2 lbs pork, 1 inch cubes
- 2 tablespoons vegetable oil or 2 tablespoons peanut oil
- 6 large garlic cloves
- 2 large onions, roughly chopped
- 1 tablespoon ground coriander
- 1 tablespoon ground cumin
- 1 piece peeled gingerroot, approx 2 inches
- 1⁄2 cup ketjap manis (sweet soy)
- 1⁄2 1/2 cup chicken stock or 1/2 cup beef stock
- 2 green chilies, deseeded and roughly chopped
- 1 tablespoon sambal oelek
- 2 kaffir lime leaves (fresh or dried)
directions
- Put all ingredients in your food-processor except the meat, oil and the lime leaves.
- Process until almost like a paste.
- Heat the oil in a large frying pan and fry the onion mixture on medium heat for approx 5 minutes.
- Turn up the heat and add the meat, stir and fry for another 5 minutes.
- Transfer to the crock pot, add the lime leaves and cook on low for 6 to 8 hours, depending on your crock pot.
- When done taste and add more sambal if desired.

I loved this! It was a bit too hot (spicy) for hubby, but you could reduce the heat by making it just 1 chile instead of 2. I used more meat (about 3.5 lb.) than the recipe called for, and there was still plenty of sauce. I didn't exactly follow the directions (I cooked the meat first, then added 1 chopped onion, then the paste) but it was obvious to me that the addition of the paste was just going to boil everything, so I poured it all into the crock pot and went on. I think the better approach would be to cook the meat, add the onions. then the spices, and put everything into the crock pot at that point. You could also make this a pre-freezer meal by just browning the meat, onions, and spices (or totally skip any browning.) I used 1 large serrano chile instead of 2 chiles, but it was large, so I think that was OK. The flavor was good. I'm sure a thai chile or even 2 Anaheim would be fine. (If you use Anaheim, then toast the skins off first or used canned.) Keep in mind that "hot" to hubby is really "mild" to me, so don't be afraid of the spicy heat. I didn't have lime leaf, so I just squeezed juice from 1 lime before cooking. I think it was a good substitute. The cooking moderated the citrus to the appropriate level. Try it, you'll like it.

Wow, wow, wow. I don't give a lot of 5 star ratings - this is easily 5 stars, not even a question. I cannot believe how easy it was to put together, and the results were amazing. I had sambal oekek and ketjap manis, but did not have access to lime leaves. Changes: used venison for the beef (no one even noticed) and left out lime zest for lime leaves, simply because I forgot to add it. Served with Indonesian Speced Rice Recipe #14639. I will definitely be putting this in the hall of fame cookbook. We loved it. THANKS a million. *Made again with chicken, and it was still good, but the venison was much better....the spices overpowered the chicken. Next time, beef!

My mom is Dutch and has moved to England in October 2007, after living 15 years in the Netherlands with my English dad. They don’t have any human children and “created” their own family, which means I have to share them with Hannah, she is a 6 years old tortie cat, Abby the dog, she is a 9 year old Beagle, and a one year old black Miniature Pincher named Poppy, I refuse to tell you my age but I am a georgious lilac British Shorthair cat!!
It is obvious she adores pets just by looking at her name she uses on Zaar (many on Zaar call her Pets or Petsie Poo), her name in real life is Annelies and that is a common Dutch name.
My mom always liked to cook, but since she joined Zaar it got out of control, and it doesn’t help that she is disorganized. Printed recipes everywhere in the house, the recipe binders have got bigger and just between you and me, her hips too!!!
I have lived in Holland all of my life until now, but they lived in several different countries/places:- desert and coastal Oman, up North and West in Holland, Vancouver-Canada, Aberdeen- Scotland and in Norway they lived in Bergen and Oslo. We have all moved together to England, as you can see I’ve already learnt the language!
I heard her say to Dad that this is the last time she moved to another country...she's had it with moving from one place to another! ( its her age...she's getting grumpy)
Mom is 55 years old but I always hear her say that the date of her birthday does not mean that much to her, the date of her cancer anniversary is more important, because so far she is a survivor.
Besides cooking she has other interests too, crafts, gardening and soap making.
She likes Zaar and is one of the hosts on the German-Benelux Forum here on RecipeZaar.
