- 1 cup uncooked lentils
- 1⁄2 lb kielbasa, cut into 1 inch pieces
- 1 cup onion, chopped
- 1 cup celery, chopped
- 1 cup carrot, finely chopped
- 1 cup potato, diced
- 2 tablespoons chopped fresh parsley
- 3 (16 ounce) cans beef broth
- 1⁄2 teaspoon fresh ground black pepper
- 1⁄8 teaspoon nutmeg
directions
- Rinse lentils and drain.
- Place all ingredients in crock pot.
- Cook on low for 6 hours, stirring occasionally.

SIMPLE and YUMMY. As posted, the recipe is 4 WW points per serving. I used lean smoked turkey sausage to lower it to 3 WW points per serving. This is very good comfort food. It has a "meat and potatoes" taste but is very healthy. I will pass it to my Mom who is needing to make diet changes, and I think she'll really enjoy it too. Bravo and thank you.

Just chop up the veggies and toss everything in the crockpot! Can't beat it, for a good convenient meal. However, it was a bit bland the first day, the next day it tasted much better. Next time, I'll use a spicy smoked sausage to add a little kick. I made the mistake of adding water to my 14.5 oz. can of beef broth to make it the 16 oz. per can, the recipe called for...that made it too watery. Had I not done that, I think it would have been a perfect dish. Will definitely be making again. Thanks for sharing!

I really enjoyed this recipe. I used turkey kielbasa rather than smoked sausage. This recipe is very similar to Lennie's Sausage and lentil soup. I like both recipes equally well. A cup of this soup is very filling and satisfying. Looking forward to many great cups of leftover soup. Thank you for posting.

I added soy sauce and fresh garlic to add flavor, and it worked out beautifully. I also used chicken bone broth, which is a go to in my house when cooking. I used an organic pork kielbasa, as well, which was amazing. I had orange and black lentils leftover from another recipe and used those, which gave the stew pretty appealing to the eye. And I changed the white potato to a sweet potato (I rarely use and eat white potato, our house is a sweet potato household!) This just amped up the flavor even more.

This is such an easy recipe! I've altered it to fit my vegan diet. I substituted Tofurkey Italian vegetarian sausage for the kielbasa, vegetable broth for the beef broth and added the following: 1 clove garlic minced 1 tsp tomato paste 1 TB soy sauce 1/2 tsp cumin 1 TB nutritional yeast It was so delicious and hearty. The next day it thickened quite a bit and turned itself into a stew. It was even better!
