Crock Pot Lentil Soup

"This is a wonderful soup to come home to on a frosty fall evening. Great with a green salad and some crusty bread. I have been known to use 2 28 ounce cans crushed tomatoes instead of the whole tomatoes and tomato sauce."

  1. The whole family loved this. I did not use the tomato sauce and still had tomato goodness. My only suggestion is to add more lentils than listed. I'll make this again with 3 cups lentils!!
     
  2. Delicious soup...even my toddler liked it. I topped each bowl of soup with mozzarella cheese, it gave it a really nice flavor. Will make it again.
     
  3. Sorry, I didn't care for the flavor of this soup. Way too "tomato-y". I wonder if I was supposed to use a smaller can of tomato? I used 2 28oz cans of diced tomato. Instead of ham, I put a ham bone in for flavor and cooked over 6 hours on low, but lentils and veggies still very firm. Not sure if it's my crockpot or not. I have now turned it to high and will leave it on high for 2 hours.
     
  4. Very, very tasty and easy to make -- even with my crazy (and copious) substitutions. I used sun-dried tomato chicken sausage instead. (Figured it was in the freezer. Why not use it up?) Also, I used the two cans of crushed tomoatoes (as per author's suggestion). Finally, left out marjoram (none in pantry) and used some regular mustard instead of the dry stuff. Still great!
