I have made these twice with rave reviews both times. i had someone request them for our work holiday eating extravaganza. Because they are in the crockpot, they are perfect for keeping at the office for people to eat as they want. I have never made shrimp and grits on the stove and other recipes I have eaten were creamier than these. I assume they used some heavy cream in their recipes or maybe used regular grits rather than the quick cooking kind. These are good on their own right though. I like these as well as the creamier ones. I did use part low sodium broth to cut down on the saltiness.

Well, can't fault the taste. It was delicious--but--. Followed directions to the letter, drained the tomatoes for a half hour, sautéd shrimp and vegetables and drained them but still I ended up with a cheesy soup. Ended up making more grits on the stove top and serving the "soup" over them. Can't see what time you are saving by using the crock pot! Will try again but do the grits separately and top it with the shrimp mixture. Might even cut back on one can of tomatoes. Not a good slow cooker recipe at all.
