Crock Pot Low Country Shrimp and Grits

"From one of Gooseberry Patch's newest cookbooks ("Fall, Family & Friends") comes this very Southern recipe for Shrimp & Grits. Now I am not Southern (my DH is), but we both love grits. I do know this dish is very traditional in the Southeast. In a check on Amazon, I discovered a cookbook devoted ENTIRELY to shrimp & grits, can you believe it? This is an easy version to be made in the crock pot. Y'all, I haven't try it yet, but as soon as I find the grits (scarce here in the southwest) I'm going to -- DH can't wait!"

  • Combine chicken broth, salt and grits in the crock pot. Cover and cook on LOW 6-8 hours.
  • Two hours before serving, saute the peppers, onions, garlic, and shrimp in the 2 tablespoons butter until tender. Add this mixture to the crock pot along with the cheeses, tomatoes with chilies, and cayenne, if using.
  • Continue to cook on HIGH an additional 2 hours.

  1. This was the first time I tried shrimp and grits doing the majority of the work in the crock pot but the flavor was absolutely delicious. I will definitely be making this again.

  3. This recipe is delicious & a winner with my family. The only thing that I changed is only 1 can of tomatoes and browned ground turkey sausage. Fantastic and perfect for a cold night!
     
  4. I have made these twice with rave reviews both times. i had someone request them for our work holiday eating extravaganza. Because they are in the crockpot, they are perfect for keeping at the office for people to eat as they want. I have never made shrimp and grits on the stove and other recipes I have eaten were creamier than these. I assume they used some heavy cream in their recipes or maybe used regular grits rather than the quick cooking kind. These are good on their own right though. I like these as well as the creamier ones. I did use part low sodium broth to cut down on the saltiness.
     
  5. Well, can't fault the taste. It was delicious--but--. Followed directions to the letter, drained the tomatoes for a half hour, sautéd shrimp and vegetables and drained them but still I ended up with a cheesy soup. Ended up making more grits on the stove top and serving the "soup" over them. Can't see what time you are saving by using the crock pot! Will try again but do the grits separately and top it with the shrimp mixture. Might even cut back on one can of tomatoes. Not a good slow cooker recipe at all.
