Directions

  1. Peel mango and remove flesh from seed and mash.
  2. Stir in lemon juice, honey, garlic, paprika, salt and pepper.
  3. Rinse and dry the chicken.
  4. Place chicken in slow cooker.
  5. Spoon mango mix over chicken.
  6. Cover and cook low for about 4 hours or until chicken is tender.
  7. While chicken cooks, make topping: Combine topping ingredients together in a small bowl and refrigerate.
  8. To serve, arrange chicken on serving dish and spoon mango drippings over chicken.
  9. Top each serving with a spoon of ginger curry topping.
