  1. Seldom does any vegetable concoction requiring cooking strike me as anything noteworthy however this Mediterranean Stew is phenomenal! I did Initially like the 3 squash, okra, other vegetables, turmeric, cumin, etc. yet almost turned up my nose when saw the raisins and cinnamon. Who would ever add such to stew? A little reading on subject got me curious. So, with 1st pot I left out these two yet experimented with them while eating. That was so good! This time I just added the cinnamon & raisins in along with the other spices. What an amazingly pleasant digestive experience. Flavor pretty good as well. Goes exceptionally good with fresh spinach and lightly buttered sprouted wheat toast. Enjoy!
     
  2. This was OK. I really wanted to like it. Takes a lot of time to cut up a Butternut squash and I'm looking for healthy/yummy vegetarian dishes that I can serve occasionally to my "Where's the Meat?" family. The spices are nice... I wonder if I cooked it too long. I know that is sometimes a problem with crockpot cooking taking the flavor out from overcooking. Disenclined to make it again but am eating the leftovers.
     
  3. I really enjoyed the stew, though once again one of my brothers was complaining about the lack of meat. No matter, his loss. Just means more stew for me! I couldn't find okra (not a very easy to find ingredient out west), so I used green beans instead. I also found that it needed salt, to help bring out the flavors a bit more.
     
  4. I loved this stew. The seasonings were perfect, just a hint of cinnamon. And the addition of raisins worked so well. I don't like okra so I used 1/2-cup peas instead. It's a five-star recipe even with peas. Great vegetarian meal.
     
  5. My carniverous family was not at all impressed with this as a main dish. However, all agreed that it would have made a good side.
