- 2 lbs boneless pork loin roast
- 1 teaspoon paprika
- 1⁄2 teaspoon cayenne (red pepper)
- 1 tablespoon garlic powder
- 1⁄2 teaspoon oregano
- 3⁄4 teaspoon salt
- 1⁄4 teaspoon black pepper
- 4 medium potatoes, peeled and cubed (1 inch cubes)
- 2 cups baby carrots
- 2 cups chicken broth
directions
- Rinse and dry roast.
- Combine all dry seasonings and rub onto roast.
- Use olive oil to brown the roast.
- Deglaze pan with chicken broth.
- Place potatoes, carrots, and roast into crock pot and set to low for 6 hours.

I made this for my family. My husband tells me every night at dinner that that night's dinner was the best dinner he has ever had. However, when he tells me that a dinner is "screamin"... I know it is a really great dinner. Not only did I get a "screamin" response to this meal.. it was also named in the top 3 they have ever had... including their mothers. (My husband's friend was also present for dinner.) My 8 year old stepson requested 2nds! I'd say it is a keeper! Thank you for posting! Please note: I used a picnic pork roast. I cut the majority of the fat off of the roast, fried it up in a pan, and used that fat (rather than oil) to sear the roast before putting it in the slow cooker. It allowed the dinner to keep the pork fat flavor that they love.

I've made this recipe several times and it has become my favorite way to make pork roast! The meat is always so tender and flavorful. The only tweaks I've made is that I omit the oregano because I don't particularly care for it, I do not include potatoes in the pot because I make mashed, and I add a third cup of broth for making plenty of gravy. And wow, does this make some awesome gravy too! I just use a butter and flour roux, and pour in the juices from the pot without skimming. Delicious!

I doubled the recipe because our roast was almost 4 lbs. Our meat was called a pork picnic roast. I added just one cut up onion and about 2 garlic cloves chopped up, placed on top of the meat with the veggies and the liquid poured around it. I cooked mine on low for actually 9 hours because we weren't ready for dinner until then. The flavor was so good. The meat was tender and fell apart. I used the ingredients and followed the recipe exactly. I have no idea what went wrong, but it is not good to me. #1 I do not care for the seasonings as combined and #2 my loin was dry and I only cooked it for 4 hours. I will not be making this again. I do feel that is you like the seasoning that using a pork roast such a boston butt would yield a much moister and tender roast.

LOVE this recipe! The only thing I changed was that I used half of the cayenne pepper- roast is super tender and tasty, spiced just right, and a wonderful gravey made with the juices in crock pot- This will definitely be one of my regular dinners. My husband raved about how delicious this roast dinner was.
