Creamy Crock Pot Rice Pudding

ingredients
- butter
- 3 cups cooked white rice (basmati or jasmine)
- 1⁄2 cup raisins or 1/2 cup cranberries
- 1 teaspoon pure vanilla extract
- 1⁄4 teaspoon ground cardamom (my addition)
- 1 (14 ounce) can sweetened condensed milk
- 12 ounces half-and-half cream
- 3⁄4 teaspoon cinnamon or 1/2 cinnamon stick
directions
- Butter the inside of a 2-2 1/2 quart slow cooker.
- Mix all the ingredients together in the crock pot.
- Cover and cook on LOW 2-2 1/2 hours or until liquid is absorbed. (^^Read intro.^^).
- Serve warm.

This was very tasty for DH, DD (toddler) and I. I used unsalted butter, white Basmati rice cooked without salt, dark raisins, no alcohol vanilla paste, freshly ground cardamom which I think made it more delicious, heavy cream plus some water as that is what I had around, plus the cinnamon stick. The look after the milk had being absorbed was slightly caramel colour which did not look too good but the taste!!! I would make this again with half-and-half and maybe no raisins but I actually thought they were good in this one. Made for Ramadan Tag 2010.

Made exactly as written for the FYC Tag Game @ FF&F using Basmati rice, raisins & grd cinnamon. I faltered at the end w/my decision making. When I ck'd the pudding at 2 hrs, it didn't seem quite done to me so I continued to cook it for the full 2 1/2 hrs & it was more dry than I'd normally prefer - My bad. In retrospect, I should have turned off the crock-pot & allowed the pudding finish cooking as it cooled down. However, adding just a bit of milk brought it back to my desired consistency. Mine also had the caramel-like color mentioned by other reviewers (prob a normal result if raisins are used). We had a guest for dinner & all 3 of us enjoyed this mellow rice pudding, CG. None of us are fond of super-sweet desserts, so this was ideal for us. Thx for sharing this recipe w/us. :-)

GREAT recipe. I doubled the recipe. I used sweetened condensed milk and heavy cream for the original recipe and all heavy cream when I doubled it because I only had 1 can of sweetened condensed milk. I added a little salt too and 1/2 of a cube of butter cut in pieces. I added about 1/2 cup of sugar to sweeten everything since the cream is not as sweet as the condensed milk. I also threw in 1/2 a large package of instant vanilla pudding mix. It came out spectacularly! Hope all my additions in this review make sense. Thanks for a yummy recipe ?

I started this about 3 hrs ago and made it as directed using Basmati (I always have it in the house). First time that I have ever done rice pudding in the crock pot and it turned out great. I took the crock out and let it stand on the counter until DH got home for lunch and he's enjoying a big warm dish of it now. I used some heavy cream as I had a liter in the fridge that was a couple of day's past it's date. DH thinks that he's being spoiled and maybe he is, lol. Excellent pudding with very little pudding.
