Crock Pot Scalloped Potatoes and Chicken

  • Place layers of green peppers, onions, cheese, and potatoes and a sprinkling of salt in slow cooker.
  • Sprinkle salt (if desired) over chicken breast and lay on top of potatoes.
  • Combine soup and milk and pour into slow cooker, pushing meat down into the liquid Cover and cook on high 1 1/2 hours.
  • Reduce temperature to low and cook 3-4 hours.
  • Test that the potatoes are soft.
  • If not continue cooking on low another hour and test again until potatoes are done.

  2. Nice and easy recipe. My daughter, who says she is so sick of chicken, loved it. It's so easy I even taught her to make it. We left out the green peppers. This one is a keeper.
     
  3. It is a delicious recipe. The cooking time could be a little longer because the potatoes were still a little crunchy. My husband said he would add carrots to give a little color.
     
  4. This is good! The chicken shredded up nicely. I thought it could have used a little salt (I hadn't added any), but none of bothered to add any extra in spite of that. My husband wished we would have added carrots, which someone else had suggested too. I think they would have been a great addition.

I should first note that I made several changes to the recipe as written: I omitted the green peppers (had none on hand), substituted cheddar cheese for Velveeta (have never bought Velveeta), and I made my own cream of celery soup from a recipe (again, had none on hand). That said, the chicken turned out incredible - I always love being able to eat chicken without a knife, and this was just about the tenderest I've ever had. The potatoes were not as creamy as I am used to for scalloped potatoes; indeed, the amount of liquid still present after cooking it all day made them rather soupy. I am wondering if my substitutions were the cause of this, or if that's just how they were supposed to be. Still, they were very flavourful, and I will certainly be making this recipe again - I'm a big fan of making a whole meal in a crockpot (well, besides a slice of buttered bread to soak up the remainder of the liquid). I think I'll use the canned soup next time and see if that makes a difference.
