Crockpot Apricot Stuffing and Chicken

"Apricots, which I confess to loving, team up with chicken to make a tasty meal complete with stuffing. Just add a vegetable and salad. I have not made this recipe yet but want to so am storing it here. I am also guessing at the preparation time. Recipe is from the magazine, "Fix-It and Forget-It Best Slow-Cooker Recipes, 2010."

  • In a mixing bowl, make stuffing using 4 tablespoons of the butter and the amount of water called for in package directions.
  • Cut chicken into 1-inch pieces. Place in bottom of a 5-quart slow-cooker. Spoon stuffing over the top.
  • In microwave or on stovetop, melt remaining 4 tablespoons butter with preserves. Pour over stuffing.
  • Cover and cook on HI heat for 2 hours or cook on HI heat 1 hour and then on LO heat for 2 hours or until chicken is tender.
