Crockpot Red Beans and Rice

  • 1 lb small red beans, washed and soaked overnight
  • 2 tablespoons garlic, minced
  • 1 cup onion, chopped (1 medium)
  • 1 teaspoon cajun seasoning
  • 1 bay leaf
  • 1 lb smoked sausage, cut into quarters lengthwise and sliced (such as kielbasa)
  • 1 12 quarts water
  • hot cooked rice

  • Drain the beans and put them in a crockpot. Add the onion, cajun seasoning, and garlic. Stir. Add enough water to cover the beans, about 1-1/2 quarts. Add the bay leaf.
  • Cover and cook on HI heat for a total of 8 hours.
  • After 7 hours, add the sausage and finish cooking one hour.longer.
  • Meanwhile cook rice of your choice. To serve. put a serving of rice on a plate and spoon the bean mixture over.
  • The beans and rice may also be mixed together and served. Red beans and rice may serve as a main dish or as a side dish.
