  • Place Chicken, Bell pepper and Onion in Crockpot.
  • Mix soy sauce, broth and spices together.
  • Pour mixture over Chicken.
  • Cook on high for 3 hours.
  • Whisk Peanut butter, starch, 1 Tablespoon of Soy sauce and lime juice together.
  • Add 1 cup of juices from crock pot and mix until smooth.
  • Stir mixture into crock pot.
  • Cook 30 minutes more.
  • Garnish with cilantro, green onion and peanuts.
  • Serve with Rice.

  1. Very good dish... tender chicken and vegetables with a unique sauce. It's definitely not like Pad Thai... nevertheless we liked it and will make it again. I have made a lot of Thai food and it doesn't resemble anything Thai that I have eaten or made. I would guess it's really a fusion recipe rather than a true regional cuisine.<br/><br/>I tasted the sauce before the last 30 minutes, it about knocked me over... it needed to be diluted. I added 1 1/2 cups of water to the crockpot with still 20 minutes to cook. I could tell right away that that was a big improvement.<br/><br/>I didn't have a red pepper, so I threw in three carrots and a couple of small potatoes. I also used a very generous 1/2 tsp of crushed red pepper (probably a little less than a tsp... we like heat).<br/><br/>Thanks for a great recipe that will be part of our go to dishes... love that it can be made in the crockpot.
