Crunchy Chicken or Turkey Wild Rice Salad

- 1⁄2 cup wild rice (one small package)
- 2 1⁄2 cups water
- 2 cups cooked chicken or 2 cups turkey
- 1 1⁄2 cups grapes, halved
- 1 (8 ounce) can water chestnuts
- 1⁄2 cup celery
- 1⁄2 cup fat free sour cream
- 1⁄3 cup reduced-fat mayonnaise
- 1⁄2 teaspoon salt
- 1⁄4 teaspoon curry powder
- black pepper (to taste)
directions
- In a small pan bring the water to a boil and add wild rice. Reduce heat, simmer about 55 minutes. Remove from heat and chill, if possible.
- In a large bowl combine the chicken, grapes, water chestnuts, and celery.
- Add the sour cream, mayonnaise, and spices, mixing well.
- Add the chilled wild rice and mix again.
- Chill for at least 1 1/2 hours before serving.

This is a great summer salad! I left out the celery and the sour cream (only because I don't like either one). I used fat-free mayo and 2 cans of canned chicken. I was afraid it may be a little dry since I left out the sour cream, so I was prepared to put in more mayo, but it turned out fine for my taste. I added a bit more curry (because I LOVE curry). I made it last night for lunch today and it was a great, quick on-the-go lunch. And it made a lot, so I'm very happy with that! Thanks for submitting!

I live in Knoxville, TN with DH, my beautiful son, and the most spoiled cat on the planet! I grew up in Cincinnati and landed in TN by way of Bloomington, IN and Santa Fe, NM. Needless to say, it's been a long, strange trip!!
To explain the name: I was veg for 11 years, vegan for 1. In the last year or so I started eating poultry and fish again, but my brother-in-law's nickname for me (smelly vegetarian) has always stuck.
