“This recipe is so good. I like to make this on Sunday night and have a piece for breakfast for a few days. This is the basic recipe. I've added chicken, shallots and basil, and I've used swiss chard cooked with onions and olive oil. I've also done a super simple one with spinach and bacon. This recipe is a good base recipe for you to get creative with. And just about any fresh herb will make this dish taste even better. I try not to add more than 1.5 cups of other ingredients. And I cook it in a 9 inch round silicone pan lightly sprayed with non-stick cooking oil (because the eggs will stick to silicone).”

  1. Pre-heat your oven to 350.
  2. Beat together the Eggs, Milk, Half and Half, Dried Mustard, Paprika, Salt and Pepper (and Nutmeg and Cayenne, if you are using them).
  3. In a well greased round cake pan, or lightly greased silicone round cake pan, that has been placed on a cookie sheet, add the cheese, making sure to spread it evenly (if you are adding other ingredients, put them in before the cheese).
  4. Slowly pour the Egg mixture over the cheese to evenly cover the pan.
  5. Place in the oven and cook for 35 minutes.
  6. Be sure to use a knife or a toothpick to check the doneness of the eggs. The more ingredients, the more time might be needed.
  7. Cook until slightly brown and done in the middle.
