  • 1 (15 1/2 ounce) can small white beans or 1 (15 1/2 ounce) canpreferably cannellini beans
  • 12 medium onion, chopped
  • 2 pressed garlic cloves
  • 14 cup olive oil
  • 1 spanish chorizo, fried and crumbled
  • salt and pepper

Directions

  1. Bring beans to a boil in a saucepan.
  2. Strain liquid and discard.
  3. Loosely mash beans with a fork.
  4. Fry and crumble Spanish Chorizo. Discard fat.
  5. Fry onion till translucent.
  6. Fry garlic in olive oil.
  7. Stir in onion, garlic, olive oil, chorizos and salt/pepper.
  8. Return to saucepan and over low heat stir until heated thoroughly.
