Cucumber Cheese Ring
"This jelly salad recipe was made by my grandmother for all our family gatherings and was always a huge hit. We don't even know where the recipe came from, we only had the ingredients written down."

- 1 (3 ounce) package green Jell-O
- 2 (3 ounce) packages cream cheese
- 1 cup mayonnaise
- 1 teaspoon salt
- 2 tablespoons lemon juice
- 1 teaspoon horseradish
- 1 cup cucumber (shredded)
- 1⁄4 cup diced onion
directions
- Mix jell-o as per directions. I usually add a bit less water than called for as the cucumber has lots of excess water. Allow jell-o to cool slightly.
- Mix together softened cream cheese and mayonnaise. Add remaining ingredients but mix together with jell-o mixture last adding jell-o slowly so as not to clump.
- Pour mixture into jell-o mold and allow to set for 8 hours or over night.
