Cucumber Millet Bean Salad With Feta

ingredients
- 125 g millet
- 250 ml water
- 1 English cucumber, diced
- 125 g reduced-fat feta cheese, diced finely (may use less if desired)
- 1 (10 ounce) can large white beans, drained
- 1⁄2 teaspoon ground red chili pepper (or cayenne pepper)
- 2 teaspoons dried dill (I use more, cause I like it)
- salt and pepper
directions
- Rinse millet and add to a small sauce pan with the 250 ml water. Bring to a boil, simmer for 5 minutes and then allow to soak up all the remaining water for 10 more minutes.
- In a big bowl combine all the rest of the ingredients. Add the millet and season with salt and pepper to taste.
- Eat either warm or cold.

I loved the combinations in this dish but I found the millet itself was pretty tasteless so I had to up the flavorings to make it really tasty. Particularly the red pepper flakes. I think this would be especially wonderful with just quinoa or a combination of millet and quinoa but, made with millet alone, I found it a little bland.

Great tasting salad you have here & although I had to buy some millet (not a standard item in my kitchen) it was well worth it, 'cause this great new salad will show up again on my table, thanks to you! I was a little short with the red chili pepper, but it did give it a nice little kick, & over the past 6 months or so I've become a serious fan of feta! [Made & reviewed in 1-2-3 Hit Wonders tag]

Oh good gracious Loula! This is so so so delicious! I was unsure about the red pepper and the dill but they just went perfectly together! The coolness of the cucumbers and the saltiness of the feta with the nutiness of the barley -- it made my tastebuds dance and sing! I did use barley and added about 2 Tbs of fat free yogurt because my feta was quite dry since it was fat free. I ate this over whole wheat pita bread, and at some point got sick of the whole "placing salad on the pita before eating routine" and just tore some up and mixed it in. I am also embarrassed to admit that at another point I had a piece of pita with salad on top in one hand and my fork in the bowl with the other hand alternating back and forth. Needless to say I am quite full! This is so delicious! You must try this!!! Made for Veg'n Swap March 2010 as a recipenap!
