  • Peel cucumber and chop into 1/4-inch cubes.
  • Combine all ingredients in bowl and mix.
  • Serve at room temperature.

  1. A delicious and quick salad to serve with a spicy curry dish. The only change was to reduce it to serve 2. Something I will make again.
     
  2. I used 2 cucumbers and 1/2 a red onion and honey instead of sugar. I thought it was really good but my husband thought it had a bit too much vinegar. I also made it about an hour ahead of time and kept in in the fridge until the rest of the meal. I will definately try this again but maybe try some other kind of vinegar next time.

I added some feta cheese that I saw in another recipe and it gave it just a bit more body and tang. Also substituted a mix of cider and balsamic vinegar for the white vinegar.
     
  4. I had two cucumbers already cut up so I doubled the liquid but still used only one onion. I thought this was good but not great. I did like the mint but felt like something was missing. I think maybe it needed a little more sweetner for my taste. Still a nice addition to my lunch this week.
