Cucumber-Pimento Salad

"This recipe came from my mother-in law's neighbor, Chuck. We were visiting her in Wisconsin and Chuck brought this over one afternoon for us to enjoy with our dinner. It was so good that after dinner I knocked on his door and asked for the recipe -- which he was kind enough to share. My family calls this "The Pickle" because it reminds us of homemade bread and butter pickles, only better. :) Cooking time is actually cooling time in the fridge."

  • Heat sugar and vinegar until sugar dissolves. Allow to cool.
  • In a large bowl, combine rest of ingredients. Pour cooled sugar/vinegar mixture over cucumber mixture. Mix well. Allow to set overnight or for at least 8 hours.
  • Enjoy!

  2. Kippy2 this was out of this world! It reminded me of my mom's bread and butter pickles...only a lot better. I followed this recipe exactly except for cutting it in half. My DH said make this again anytime! (went back to get another bite after dinner and he had eaten it all). Thank you for a *delicious* recipe! Made for Spring PAC 09.
     
  3. I am so pleased to be the first to review this recipe. This was a delightful dish, perfect as a side to just about anything - very versatile! My family of four polished it off in one night, YUM! I didn't have pimentos, so I finely chopped a sweet bell pepper (orange) instead. This reminded me of the cucumber salad you often find in oriental restaruants. THANKS Kippy!!
