  • In lg bowl, combine the first 5 ingredients.
  • Mix well and chill for 15 minutes.
  • Add peanuts and red pepper flakes.
  • Toss well.

  1. Very nice side dish for a Thai dinner. I didn't (and wouldn't)change a thing. Great mix of flavours with the sugar, vinegar, soy sauce and red pepper. I will definitely try it again this summer with our home-grown cucumbers. Thanks MizzNezz!

  3. Very nice. Had it with BBQ swordfish and roasted potatoes. Had cashews instead of peanuts. Would be good with sunflower or sesame seeds too.
     
  4. Definitely distinctive. Although it did not go too well with the meal I picked, I think it would be very good with a Thai meal. Certainly worth keeping in my cookbook.

After DH and I moved away from the farm, and to the city...I haven't done as much cooking and very little canning. But I do come to Zaar and look for new recipes once in a while. I'm still cooking Zaar!! I like to play at Facebook, with my family and friends. A lot of my Zaar friends are there!! Yay! It's a good way to keep in touch. We travel more. We're looking at the European trips now. Hope to go in the springtime. I really want to see London, I think I lived there in a past life, I've been obsessed with it since I was 10 years old!!
