ingredients
- 2 cups cucumbers (Peeled, Seeded &, chopped)
- 1 cup red onion (Chopped)
- 1 1⁄2 cups yellow bell peppers (Copped)
- 2 serrano peppers (Minced)
- 1⁄4 teaspoon fine sea salt
- 1⁄4 teaspoon white pepper
- 1⁄4 cup seasoned rice vinegar
- 3 tablespoons fresh lemon juice
- 1⁄2 cup cilantro (Chopped)
- 1⁄4 cup of fresh mint (Chopped)
- 3 tablespoons fresh oregano (Chopped)
- 3 tablespoons fresh thyme (Chopped)
- 2 tablespoons fresh dill (Chopped)
- 2 teaspoons fresh marjoram (Chopped)
- 1 teaspoon cardamom (Ground)
- 1 bay leaf
directions
- Place all ingredients in a large glass bowl and gently stir.
- Taste Cucumber Salsa and add more Serrano Peppers if you desire more heat.
- Season with fine sea salt and white pepper to taste. .
- Cover Cucumber Salsa and chill for several hours. Remove bay leaf for service.
