Cucumber Vegetable Salad With Cilantro

- 1 large English cucumber, thinly sliced
- 1⁄2 teaspoon salt
- 1 yellow bell pepper, seeded and sliced into short strips
- 3 medium carrots, peeled and sliced into rounds
- 2 cups cherry tomatoes, halved
- 1⁄2 medium red onion, cut into thin slivers
- 1⁄2 cup chopped fresh cilantro leaves
- 1⁄4 cup vegetable oil
- 1⁄4 cup rice wine vinegar
- ground black pepper, to taste
directions
- Toss cucumber slices with salt in a colander; let stand 30-45 minutes, until juices drain. Pat dry with paper towels.
- Turn into a large bowl and add the remaining vegetables, cilantro and oil; toss gently to coat.
- Add vinegar and ground pepper and toss again. Serve. (Can be made several hours ahead of time and refrigerated).

So fresh and delicious tasting! All of the ingredients together are a win in the tasty and healthy department and one can't go wrong with this salad. However, because I realized at the last minute that I didn't have carrots and red onion, I had to leave the carrots out and used Vidalia onions instead of the red onion, and used fresh cut tomatoes in place of the cherry tomatoes, but no fear, though changes were made, it was Fabulous! Thank you, duonyte, for sharing this winner here with us. Made it for Only the Lonely tag game.

My screen name is a diminutive in Lithuanian for bread, so you won't be suprised to learn that I love to bake bread. In recent years I have been baking a lot of sourdough breads and have several starters sitting in my refrigerator. But I like to cook a lot of other things, as well, especially from various cultures.
