Curied Egg and Avocado Sandwiches

- 1 avocado (cubed)
- 1 teaspoon curry powder (I would use Madras but I like hot)
- 1 teaspoon cumin powder
- 3 hard-boiled eggs
- 1 teaspoon lemon juice
- sea salt (to taste0 )
- fresh ground pepper (to taste)
- 6 slices bread (wholemeal crust removed)
directions
- Place the eggs and avocado in a mixing bowl and mash until smooth and then add all the remaining ingredients and mix thoroughly and season with salt and pepper to taste.
- Place 3 slices of bread on a tray and add 2 tablespoons of the egg/avocado mixture to each slice and then place remaining bread of top of mixture to make a sandwich and then cut into three fingers.

Great lunch! Loved that there is no mayo in this and the texture (was worried when I started to mash that it would be too thick but it turned out to be perfect), another concern was that it would be too much curry for DH (sound just right for me but he is not big on spicy of any kind) but he said it was really good. Thanks for the post.

With the demise of the forums and with no more interaction on site with what was a great community and it was a pleasure to get to know so many of you over the years and to have had the privilege of meeting some of you in person. For me now this is just another recipe site like to many on the net, it has lost its specialness, such a pity especially when Scripps changed the name from Recipezaar to Food.com and made this statement sorry cannot replicate here as considered invalid but they basically said yes the community was valuable hence .com was short for community but it was a pack of lies as they were not willing to put the money into that community and got rid of the forums which was the community so for .com has become .crap.
