“This is a pastry that I have grown up eating. It is very delicious and flaky yet soft. If you can't find currants use raisins (but then it'll be a raisin roll ;) - no matter, it is still just as delicious!) I haven't tried this recipe yet but I intend to make some very soon! I don't know the servings so I am estimating.”

  1. For the Dough:.
  2. Mix flour, salt, and baking powder.
  3. Cut in the shortening.
  4. Pour hot water over butter and stir to melt.
  5. Add lemon juice and egg yolk. Mix well.
  6. Stir liquid into dry ingredients and knead.
  7. Chill dough overnight.
  8. To make Currants Roll:.
  9. Preheat oven at 350°F.
  10. Roll out the dough in a large rectangle.
  11. Spread the butter, sprinkle the cinnamon (according to your own taste).
  12. Spread and press in the currants on the dough, and sprinkle a little sugar.
  13. Roll the long side of the dough up like you would with cinnamon roll dough.
  14. Moisten the edge with a little milk, press together to seal.
  15. Place on lightly greased baking sheet or dish.
  16. Bake for 25 minutes, or until golden brown.
  17. Cool on a rack and cut.
