Directions

  1. Heat oil in saucepan.
  2. Add shallots (onions), sauté for 3 minutes until tender.
  3. Add potato, carrots, ginger & curry. Cook 2 minutes.
  4. Add broth. Bring to boil then simmer for 25-30 minutes – until tender.
  5. Puree soup ½ at a time in blender or food processor.
