  • Prep ingredients (cube potatoes, slice onions, chop garlic and cube chicken).
  • In a large skillet, melt butter over low heat . Once melted, add curry powder and swirl until well blended.
  • Add in the can of coconut milk and mix thoroughly. Keep warm.
  • In a separate skillet, sauté the garlic and onions in olive oil.
  • Once the onions are translucent, add chicken.
  • Once the meat is cooked very lightly, add potatoes and curry mix to the pan.
  • Cover and simmer about 30 minutes.
  • Serve over rice.
