- 6 slices bacon
- 2 cups finely cut organic lacinitos kale
- 3⁄4 cup coconut milk
- 2 teaspoons Thai curry paste
- 1 lb simply potatoes jalapeno & cream cheese mashed potatoes
directions
- In a heavy nonstick frying pan heat bacon until browned. Remove with slotted spoon and crumble, set aside. In drippings, add kale and cook until wilted.
- Open a can of coconut milk without shaking and scoop off the top, most creamiest part until you have 3/4 cup. Add coconut to the pan with curry paste.
- Add potatoes and cook, covered, until softened. Stir in crumbled bacon and adjust seasoning to taste.
- • Adjust Thai curried paste to your liking, some brands are spicier/ saltier than others. Adjust for salt.
