Curried Couscous Salad

  • In a large microwave safe bowl mix couscous, boiling water, curry powder and olive oil.
  • Cover bowl and heat in microwave on HIGH for 3 minutes.
  • Fluff couscous with a fork and let it stand uncovered for 5 minutes.
  • Fluff the couscous again with a fork.
  • Add scallions, craisins and pine nuts to couscous and stir.
  • Season with salt and pepper to taste.

  2. This was good. My hubby turned up his nose when I told him there were craisins in it. He doesn't like dried fruit at all. But he really enjoyed the salad!

  4. Wow. That's it. Simply wow. I have made a gazillion or so couscous salads in my life, and I never really thought to add curry to them. I was more into the olive oil and lemon rind couscous salads, but I have seen the light. I have to admit that I didn't follow the recipe per se, I made up a batch of whole wheat couscous and then added unmeasured amounts of the rest of the ingredients. I brought this as a hostess gift (all dressed up in a gorgeous Tupperware salad bowl) and all of us were fighting over the craisins (note to self: more craisins next time). I'm planning on making this again this coming weekend, and just might add some chopped dried apricot to the mix as well. Kol hakavod, Joni, you have a winner here!
