Curried Parsnip Soup

"This recipe elevates the lowly parsnip into something special--a lovely Fall soup. Although not necessary, you can enrich this soup by adding some light cream just before reheating."

  • Heat the oil and butter in a large pan until the butter has melted.
  • Add the onion, parsnips,apple and garlic and sauté stirring frequently, for 5-7 minutes, until the vegetables have softened, but not colored.
  • Add the garam masala and chili powder and cook, stirring constantly, for 30 seconds.
  • Sprinkle in the flour, mixing well, and cook, stirring constantly for an additional 30 seconds.
  • Stir in the stock and lemon rind and juice, then bring to a boil.
  • Reduce the heat and simmer for 20 minutes.
  • Puree the soup in a blender or food processor, being careful not to splash the hot soup.
  • Heat the soup through until piping hot.
  • Season to taste with salt and pepper.

  1. I used 3 small apples, 2 BIG garlic cloves, no flour, added 1 cup of red lentils (dahl) and 2 tbs of apple cider vinegar instead of lemon. 7 cups of vegetable stock was used. Once the soup is cooked I added 3/4 cup of soft tofu that was pureed with a handheld blender into a thick cream. Absolutely delicious!
     
  2. Only changes I made was no lemon rind, and I forgot the flour (whoops!). This soup came out utterly fantastic. Most soup servings come in disappointingly small portions, however this makes a very generous amount. Delicious, nutritious, and easy to make. It doesn't get any better than this. THANKS!
     
  3. I introduced my mom to recipezaar tonight, and then she went on to make this soup. She is fast-and-loose with recipes, so I know she wasn't strict with the measurements -- the only things I know for sure is that she stayed true to the ingredients listed, and she halved the lemon (& forgot the rind). This was a fantastic soup. I was worried that the Indian element of it would be harsh or bitter somehow, but it was VERY pleasant and pleased all five of us adults, from the "no-soup" DH to the conservative palate of the 78 year old in our midst.
     
  4. It`s 15 degrees outside but inside it`s nice and warm with the help of this soup! Was short on the parsnips so I added 1 carrot. No salt needed. Has plenty of flavor. This is a must have real comfort food!

<p>Life often interupts our comfortable routines in very unexpected ways and in the past three years I've certainly faced some challenges.&nbsp; As a health nut who ate mostly vegetarian I was beyond shocked to discover that I was diabetic.&nbsp;<img title=Yell src=../tiny_mce/plugins/emotions/img/smiley-yell.gif border=0 alt=Yell /> I shouted and rebelled and cried.&nbsp; But the good news is that I can control my glucose levels simply by eating very low carb.&nbsp; What a complete turn around it was to&nbsp;pass up&nbsp;all my high carb vegetarian foods like grains, and veggies and embrace meat!&nbsp;<img title=Surprised src=../tiny_mce/plugins/emotions/img/smiley-surprised.gif border=0 alt=Surprised /> I've adjusted to this limited diet and thanks to Zaar can eat a nice variety of healthful meals.</p> <p>&nbsp;The next challenge was a freakish fall I took while in New York with my daughter that left me paralyzed and in much pain.
