Curried Pork and Pepper Stir Fry

ingredients
- 2 garlic cloves, minced
- 2 teaspoons fresh ginger, minced
- 2 teaspoons curry powder
- 1 teaspoon ground coriander or 1/2 teaspoon ground cumin
- 1⁄2 teaspoon salt
- 1⁄8 teaspoon cayenne pepper
- 1 lb boneless pork, cut into strips
- 1 tablespoon peanut oil
- 1 green bell pepper, diced
- 1 red bell pepper, diced
- 8 ounces pineapple chunks in juice
- 2 tablespoons honey
- 1 tablespoon cilantro, chopped
directions
- Combine garlic, ginger, curry powder, coriander (or cumin), salt, cayenne and toss with pork strips.
- Heat oil in a large skillet or wok and cook pork 2 to 3 minutes.
- Stir in peppers. Cook 3 to 4 minutes.
- Add pineapple, juice and honey. Cook 2 minutes.
- Stir in cilantro and serve.

Good basic idea. Curry powder comes in many strengths. Next time, and there will be a next time, I will double the curry that I have and also double the pineapple and add raisins since the wife likes fruity curries. The dish presents well and I would submit a photo if I could figure out how to do it without compromising my security by re-opening a Facebook account.
