Directions

  1. Heat oil in large pot and add onion and garlic.
  2. Cook till tender and add curry powder.
  3. Cook, stirring till aromatic - about 1 minute.
  4. Add sweet potato, stock and apple.
  5. Bring to boil.
  6. Simmer, partially covered for 45 minutes.
  7. Cool then blend with stick blender and season to taste.
  8. Reheat gently adding coconut cream.
  9. Add more stock if too thick.
  10. Serve with buttered toast.
