  • Whisk together the mayonnaise, scallion, parsley, curry powder, vinegar, cinnamon, salt and pepper in a large serving bowl.
  • Add the chicken, celery and cucumber. Toss well. Serve immediately or refrigerate, covered, for up to 1 day.

  1. This is pretty nice, although not as out of the ordinary as I expected it to be. I added some chopped radishes. It does make a generous amount. I think I'll add a little more curry powder to the leftovers. Thanks for posting! Made for 1-2-3 Hits tag.
     
  2. This was alright. I didn't have celery so I added extra cucumber but I know it would be better with some celery. I didn't add salt because it didn't need it. I also added some apple as I like them with curry for a bit of sweetness. Made for 1~2~3 Hits - Winter 2010.
     
  3. We had this as a nice light and easy dinner - leftovers will be good tomorrow. It made a generous amount.I served on a bed of iceberg lettuce. Made for Everyday is a Holiday tag.
