  • 2 ounces vodka (a good brand, use more if you like a stiffer drink)
  • 8 ounces fresh carrot juice
  • 4 ounces fresh orange juice
  • 1 tablespoon fresh lemon juice
  • 2 washed baby carrots, with the green tops intact (optional)

directions

  • Stir the vodka with the juices.
  • Pour over ice in chilled highball glasses.
  • Garnish each with a baby carrot if desired and serve.

  1. I think my problem was that the OJ I bought was not the best quality. So the drink was on the bitter/sour side. I reached for a can of frozen OJ and put 2 tablespoons in. Boy, did that turn the drink around for me. So I'd suggest to make sure you buy a high quality OJ or buy frozen and do not dilute it. Thank you for posting.   2. My farmer's market had cute baby carrots in assorted colors so this was a fun drink to show them off! At first it was hard to detect the carrot juice...it mostly tasted like a vodka and OJ. Then I realized...OOPS...I had switched the amounts, so added more carrot juice and it was perfect! Thank you for this vitamin-packed cocktail.
