Dad's Award Winning Apple Butter Crepe Bites

Crepes
- 1 cup all-purpose flour
- 1 1⁄2 cups milk
- 2 eggs
- 2 tablespoons sugar
- 1 tablespoon cooking oil
- 1⁄8 teaspoon salt

Filling
- 1 teaspoon apple butter
- 1 1⁄2 teaspoons philadelphia cheesecake filling
- 3 pieces walnuts in syrup, dad suggests Smucker's brand (optional)
directions
- Mix ingredients for the crepes together, adding then in the order given until the mixture is smooth and free of lumps.
- Heat a lightly greased skillet over medium heat until water sizzles on contact.
- Pour 1/8 teaspoon of batter into skillet, swirl for evenness and cook for 30 to 45 seconds.
- Remove from the skillet onto a clean dry towel while making the rest of the crepes.
- Spread filling on each crepe in the order given in the filling ingredients list.
- Roll up crepes and cut into 1 inch or so bite size pieces.
- Insert toothpicks (but don't count on them for support) and serve as a plated dessert snack.

I am originally from the Philadelphia area of the United States but have been living in London, UK since 1996. I now have dual American and British citizenship. I became a widow at the age of 27 in 2004 but have managed to fall in love again and was married again on July 19, 2008.

I have started a blog - <a href="http://weekendcarnivore.com/">Weekend Carnivore</a> where I blog about trying to eat a mostly vegetarian diet. I share a lot of my discovered recipes there. If I make one of your vegetarian recipes and I managed to take a good photo of it, chances are I will blog about it and tell everybody how much I enjoyed it.
