SHRIMP
- 1 1⁄4 lbs chilled cooked shrimp (shelled and deveined)

COCKTAIL SAUCE
- 1 (8 ounce) can tomato sauce (Hunt's brand)
- 1 cup tomato ketchup (Heinz brand)
- 1 tablespoon fresh squeezed lemon juice (Meyer lemon)
- 2 -3 teaspoons prepared horseradish (Morehouse brand)
- 1 1⁄2 teaspoons finely minced flat leaf parsley
- 1⁄4 teaspoon fresh lemon zest (Meyer lemon)
- 1⁄4 teaspoon Worcestershire sauce (Lea & Perrin's brand)
- 1 dash fresh ground black pepper
- 1 pinch cayenne pepper
directions
- LINE a colander with paper towels; place in kitchen sink.
- PLACE chilled, pre-cooked, shelled and deveined SHRIMP into paper-lined colander and allow to drain.
- WHISK all SAUCE ingredients in a medium bowl.
- ADD drained SHRIMP to sauce, tossing well.
- CHILL shrimp cocktail, covered in refrigerator between 1-2 hours.
- FILL individual cocktail glasses or wide champagne glasses with shrimp cocktail.
- GARNISH each serving with a sprig of fresh parsley.
- ADD a fresh lemon wedge to the rim of glass.
- SERVE on a small plate (I include both a small fork and spoon!).
- START SHOVELING and enjoy!
