Dad's Saucy Meat Loaf

"This recipe originally called for ketchup. I got the idea to substitute Bennets chili sauce. Really good. Serve with yukon gold mashed potatoes and your favorite veggie."

  • Preheat oven to 350 deg.
  • Combine grnd chuck, oats, milk, 2 Tbs chili sauce(save back 6 Tbs for sauce) onion, egg, Lea & Perrins, and chili powder.
  • Form into loaf shape and Bake 1hr.
  • Combine remaining chili sauce w/brown sugar. Spread over meatloaf.
  • Bake additional 15 minute or until thermometer reads 165 deg.
  • Let stand 10 min and slice.
  • If desired, serve with Yukon Gold Homemade ( no instant) Mashed Potatoes and corn.

I live in the Chicago area. I do most of the cooking at home. Now that I'm retired I can do more of the things I really care about, one of which is cooking. I enjoy trying new things as long as it's not too complicated. I like to keep it fairly simple. Simple does not mean plain, just fairly uncomplicated Like throwing a bunch of ingredients together in a dutch oven, pop it in the oven and forget it for a few hours.
