ingredients

  • 2 cups pancake mix (we use trader joe's multi-grain pancake mix because it has no trans fats)
  • 1 13 cups 1% low-fat milk or 1 1/3 cups nonfat milk
  • 2 tablespoons canola oil or 2 tablespoons softened butter
  • 1 egg
  • 14 cup nuts (we use pecans and walnuts)
  • 1 banana
  • 1 teaspoon cinnamon
  • 1 teaspoon honey
  • 1 teaspoon vanilla
  • semi-sweet chocolate chips, 12 semi-sweet chocolate chips, per waffle (for a special treat) (optional)

  • Combine everything in a blender and mix until combined and nuts are crushed.
  • Heat up waffle iron and grease lightly with nonstick spray.
  • Cook according to manufacturers directions.
  • Top with pure maple syrup, butter, fat free whipped cream, fruit or whatever else you want!

  1. Great flavor, but, probably more suited to pancakes. The batter was so thin, and the waffles would NOT crisp up - they came out of the iron a floppy mess. But, it's a great start, and I'm definitely going to try to figure out how to make them more waffle-ey
     
  2. Great recipe! I skipped the chocolate chips but otherwise followed the recipe. These were very much enjoyed for breakfast this morning. Thanks for sharing. Made for PAC Spring 2010.

As much of a chocoholic as I am, I did leave out the chocolate chips (at least this time around) but otherwise followed the ingredient list ~ Used nonfat milk, canola oil & the pecans & had a great, late breasfast shared with my son & a friend of his!
