Dahi Barfi (Sweet Yogurt Bars)

ingredients
- 1 cup yogurt
- 1 cup sweetened condensed milk
- 1⁄3 cup raisins
- 1⁄3 cup cashew nuts, chopped
- 1⁄2 teaspoon baking powder
- 2 tablespoons flour
directions
- Preheat oven to 200 degrees.
- Mix all ingredients in a large bowl and pour the mixture in a 8x8 pan.
- Bake 20 minutes or until set in the center. Allow to cool and cut in squares.

Made exactly as written for CQ4 & the Happy Campers team - This is an ingredient-friendly easy-fix that we liked for the fact it was not overly sweet. Its texture resembles a cheesecake, but it has textural components not often present in cheesecake. I did have to cook it longer than suggested for it to test done, but just "eye-balled" it until it appeared done. I felt like it might benefit from the addition of some vanilla extract or some toasted coconut to add a flavor variant, but it is still good w/o them. This would be an excellent after school treat for your kids, Janin. Thx for sharing this recipe w/us.

I began cooking as a kid with my mom. I cook mostly Mexican food, but my best recipes are the ones that I improvise at the last minute! Especially desserts, which I love to cook, but always forget to write down.
