Dairy Free Meatballs

  • Preheat oven to 375°F.
  • Place all ingredients except olive oil into a large bowl and mix together using your hands. Once it looks like the onions are well distributed throughout, you can probably stop.
  • Place a layer of aluminum foil on a rimmed baking sheet. Thinly coat with the olive oil.
  • Begin to shape the meatballs using a small handful of the mixture, placing each one on the oiled sheet pan.
  • Bake in preheated oven for about 20 to 25 minutes, until cooked through. Drain on a towel (or not).
  • Serve hot or in marinara sauce over noodles.

  1. These meatballs were alright--probably more like 3.5 stars. They worked well when serving someone on a dairy-free diet, but they were a little bland, even with the full 4 cloves of garlic. I'd definitely recommend adding more seasonings. I cooked the onion and garlic until they were just softened, but I'm sure raw would be fine if you're in a hurry. I prepared them the night before and kept them in the refrigerator, which turned out to be good because they were a little loose at first; the chill time seemed to make them hold together better.
