- 6 large boneless skinless chicken breasts
- 2 stalks celery, coarsely chopped
- 1 large onion, coarsely chopped
- 1 large green pepper, coarsely chopped
- 3 cloves garlic, crushed and chopped
- 1 lb fresh mushrooms, halved if large
- 1⁄2 cup green olives or 1/2 cup black olives, coarsely chopped
- 1 1⁄2 teaspoons italian seasoning, crushed
- 1⁄2 teaspoon crushed red pepper flakes, for heat (optional)
- 1 cup crumbled blue cheese
- 2 cups prepared low-carb spaghetti sauce
- 1⁄2 1/2 cup merlot or 1/2 cup sangiovese wine
directions
- In a large greased baking or roasting pan, place the chicken breasts and top with all of the vegetables.
- Sprinkle with the seasonings and cheese.
- Top with the spaghetti sauce mixed with the wine.
- Cover tightly with foil and bake at 300 degrees for 2 hours.
- Refrigerate overnight to meld and deepen flavors.
- Reheat uncovered at 350 until hot and bubbly.
- If you're not counting carbs, serve this over pasta, but it's just as great on its own.

Absoulutely yummy! I didn't even get a chance to put it in the fridge to sit overnite. It smelled so delicious as it cooked today, I decided it had to be good enough for tonights dinner :) I bet it would be even yummier after letting the flavors meld overnight!! I have only cooked with wine a few times and this recipe knocked both of those to the curb. Thanks so much for this wonderful recipe.

I live in Minnesota, and actually like the winter more than summer! (Must have Siberian ancestors!)
The main focus of my life is, and always has been, children. I've spent the majority of my life either educating myself about children, having and raising children, or working with children. I presently work in an elementary school with children that have emotional/behavioral difficulties, and have three daughters of my own.
I also have four grandsons (one an extra gift that came when my daughter very wisely married his dad) and will become Grandma to the the 5th baby in June. This one a little girl! I can not wait!! I received so much joy being a mother that finding that much joy, and more, in being 'Grandma' has taken me by surprise. They are all the best gifts ever given to me.
Whatever free time I have is spent with my nose in a book, surfing the web for new recipes, or with my wonderful friends, both online and "in person".
